In her cooking workshop located in the heart of Old Lyon, you will learn to create this emblematic French pastry dough step by step. Between technical gestures, professional tips and moments of sharing, you will make your own puff pastry before using it to create a generous dessert.

Workshop outline

• Welcome and discovery of puff pastry:
Fanny welcomes you to her workshop and introduces you to the basics of puff pastry, its role in pastry-making and the essential principles for obtaining a light and crispy texture.

• Making your puff pastry:
you prepare your dough from simple ingredients and discover the lamination technique, which consists of incorporating butter and performing several folds in order to create the thin layers characteristic of puff pastry.

• Mastering technical gestures:
you learn to manage the butter temperature, resting times and the different turns necessary to obtain a well-developed and regular puff pastry.

• Making your dessert:
from your homemade puff pastry, you create a delicious dessert chosen by the group: a praline custard tart, a Lyon specialty, or a crispy mille-feuille filled with creamy custard.

Leave with your homemade puff pastry transformed into a delicious praline custard tart or a mille-feuille, ready to be enjoyed and shared.
